Abstract

Rinuak is a kind of small fish that live in lake maninjau, west sumatera. the fish very much utilized in communities around the lake as food side dishes. for processed food product diversivication based on local potential of west sumatra, it has made the manufacture of shredded rinuak with oyster mushroom mixture. processed products such as shredded rinuak and oyster mushrooms is compared to the standard quality of shredded SNI 01-3707-1995. from the analysys of content, water, ash, fat and protein content, the quality obtained with the SNI Shredded
