Abstract

Analog rice or artificial rice is a Non-paddy's rice made from other carbohydrate sources, with the carbohydrate content is close to or more than rice and it has rice-like shape. Cassava is used as an alternative of rice because It is one among the tubers that have the highest carbohydrate value- The high value of carbohydrates ls not supported by other substances, especially protein content, so when producing the analog rice, this product is expected to have protein values close to rice from paddy, and could be better
