Abstract

Diversification of food consumption one of which can be done by making rice analog. Analog rice is rice that comes from carbohydrares other than rice with a value approaching or exceeding rice. Materials that can be utilized in the form of local food such as ca.1·sm•a, sago, corn, sweet potato, purple and so forth. Sago and purple sweet potato are two of the many local food in various regions of West Sumatra. Special purple sweet potato has a uniqueness of its color. Purple color which is owned by the purple sweet potato is not owned by other foodstuff that makes the purple sweet potato has a property to ward off fee radicals (antioxidant) that occurs in the body. This research has been conducted in the laboratory and chemical processing Polytechnic State Agriculture Payakumbuh. This study is a comparison of the nutritional value of rice analog purple sweet potato sago with hulled rice quality according to the standards. Rice analog purple sweet potato and sago produced nutritional value approach criteria hulled rice originating from rice so well as alternative substitutes rice in which the Falue of 7, 93% water content, ash content of 0. 9 I%, 2, 79'.% protein. fat 16, I 0% and 72, 2 7% carbohydrates.
