Abstract

The research was conducted to determine the making process of a beverage from coffee leaves in west sumatera which is called kawa daun. Kawa daun is made from the leaves of coffee which is “didiang” until dry and then brewed as tea brewing. This beverage have a distinctive flavor and aroma similar to coffee. the study wasconducted in 9 locations in 3 districts in west sumatera. this research was conducted by collecting primary data in direct interviews with beverage maker at 9 different locations. the result obtained showed that the raw material for making beverages come frome tabek patah, tanah datar, west sumatera. the beverage was made by boiling the leaves (kawa daun) in water with concentration 20g/l and found in 4 locations adding other additional material in the process of making beverage
